Frequently Asked Questions

The Food Safety Essentials course is around 1 hour of video training, plus some short quizzes. The topics are broken down into short bite sized videos between 1 and 6 minutes long. There’s no timetable – you can do them whenever you like. You can re-watch the videos as many times as you like, and retake the quizzes as many times as you like.

Common sense isn’t always so common! We’ve all learnt food safety behaviors from somewhere or someone, and they may or may not be correct! Having visited hundreds of different business I have found huge variability in people’s knowledge and practices. Some are excellent and some are scary. You cant assume that everyone knows what you know, or that people always do things right. If you employ staff never make assumptions. If you are the owner or manager, maybe this course will just help reassure you that you are doing the right thing and you’ll have the certificate to prove it. I’m confident you’ll still learn something new.

Courses are video based with slides, voice over and text. The content is explained in a way that’s easy to understand, but not patronizing. There is a short 4-6 question quiz at the end of each topic to make sure you understand it. If you don’t pass the quiz you can re-watch the videos and take it again.

The current Food Act and Regulations don’t require food workers to have a particular NZQA qualification or to take a certain course. Under the previous regulations some Council’s made bylaws about what courses a food worker had to take. But these were all repealed when the new Food Act came into force in 2014. The current rules do require that food workers have the competency required to carry out their tasks. It requires that these competencies are identified and records are kept that demonstrate those competencies and skills have been achieved to ensure food is safe and suitable. This course meets the requirements for staff training in the topics included. MPI and Councils are not allowed to officially  ‘approve’ courses now, but some are happy to point you in the right direction towards useful training like this to help.

The Food Control Plan and National Programme Guidance both identify 5 key topics that all food workers should know about, they are: Hand hygiene, personal hygiene and sickness; storage of food; allergens; cleaning and sanitizing; and what to do if something goes wrong – including customer complaints. These topics are all covered in the Food Safety Essentials Course. If you do additional tasks like cooking chicken or choosing suppliers then you’ll need extra training on those tasks.

If you are an owner-operator startup ‘foodpreneur’,  you need a course that covers both safe food practices and setup of a National Programme or Food Control Plan. Traditional courses often require a day off work and tend to focus on getting a qualification, rather than monitoring food safety and setting up record-keeping systems.
